SHIPPING DURING HOT WEATHER: Due to the potential for melting during warmer months, shipments will be shipped at buyer's risk. We recommend anticipating your needs and ordering sufficient quantities before warm weather. Most chocolate can be melted again without trouble.
WARNING: Use Compound / Confectionery / Summer / Coating Chocolate in candy molds and dipping candies. Real chocolate must be tempered; we offer this type chocolate for the more experienced candy maker.

Storage: Wrap small candies or lolypops in cello bags and tie with pretty ribbon. Seal boxed chocolates using cello roll. Place them in sealed containers if possible. Store in as cool a place as possible...around 60 degrees.  (Containers that have no odor because would make the choc. taste bad...picks up odors.) If you were to not keep them tightly sealed, chocolate gets a chalky look. It is still good to eat but I'm sure you want them to look pretty too.

CHOCOLATE CURLERS AND SHAVERS
HINTS FROM KATHY F: MAKING CHOCOLATE CURLS: I found almond bark from the grocery store works pretty easy. Depending on the temp in your room, about 15 seconds in the microwave on low softens it to the perfect temp for using a vegetable peeler to make fast and easy curls. If the chocolate is too hard it will be brittle and your curls will crack or break. If it's too soft they will squish up a bit. Just adjust your microwave time accordingly. You can easily cut one of the little blocks of bark into curls before the temp of the bark changes on you. If you want to use real chocolate you can pour it into a mini loaf pan lined with non stick foil and then cut those into curls. After forming the mini loafs with real chocolate you need to let it solidify completely and then soften it a touch in the microwave.

Paramount Crystals Flakes  An essential to have on hand at all times while making candies! You never know when you will accidentally get a drop of moisture in your chocolate and thicken it.... or use it when chocolate is too thick for painting molds... etc. Used to thin chocolate when it is thicker than desired. Just melt some in the microwave and add as much as needed to thin the way you like. This is a pure shortening that will not taste as would Crisco. Candy Writers - chocolate already in a tube ready to warm & use. These are easily kept warm in a glass of hot tap water or a heating pad. Candy coating in a tube makes painting molds, decorating cakes, cookies and candies extremely easy!
Microwave:  You can zap the candy writers in the microwave for a few seconds at a time, kneading in between the seconds.
Electric Skillet:  Turn on an electric skillet on the lowest  possible setting.  Line with a lot (6 or 7) dry dish towels. Place the candy writers in until fluid. Keep candy writer in skillet when not using.
Heating Pad:  Turn heating pad on lowest possible setting. Place candy writers in until fluid. Line with 1 or 2 dry dish towels.
Water Bath: Use glass that is shorter than the tube. Using hot tap water, changing often.
*If the candy won't come out of the tube after it is melted, use a straight pen to unclog the tip

Chocolate Covered Bananas INSTRUCTIONS:    Milk Chocolate | Nuts| Sprinkles| Sucker Stick
Insert 8" sucker stick in banana, freeze. Warm chocolate and dip banana until well coated. Quickly roll in sprinkles/nuts. Place on wax paper until set. Store in air-tight container. Display on a fake styrofoam cake.


Merckens® Color Chart. The Following Merckens® candy color table may vary in contrast with different monitor settings. Use it only for a rough idea on how to acquire "close" colors.

To use the chart find the Merckens® color close to your desired color, and experiment from there. To use this chart the references used are for the Merckens® Rainbow colored chips/rounds/melts, as an example to acquire the Merckens® color in row 2 column 3 you must use 20 Merckens® yellow chips, 11 Merckens® white chips, and 1 Merckens® blue chip. Melt and mix/stir these together, your color should be very close to what we show here. To vary or achieve your desired color, start with something close and add Merckens® Candy melts as needed to gain your desired color.

You can also convert the Merckens® specs here over to ounces or pounds using the same formula. As an example to again acquire the color in Row 2 Column 3 instead of using the chips as a count you would use ounces as 20 ounces of Merckens® yellow, 11 ounces of Merckens® White and 1 ounce of Merckens® blue.
