A exciting new line that both the Pastry Chef and amateur chocolatier will enjoy! Chocolate Wedge molds have a good detail, make a nice nibbling piece of chocolate on any pastry. An elegant decoration for cakes, cheesecakes, mousse, ice cream, tarts, and other pastries. Mold cavities are thin and require a straight scraper to level. A bent metal icing spatula works great. Place melted Merckens coating chocolate in a squeeze bottle, filling mold cavities. Tap mold to settle chocolate then scrape level. Freeze just a few minuets then invert over a clean soft tea towel to prevent breakage. Allow to return to room temperature. Using a Candy Glove pick up chocolate piece gently and place on. Other designs available upon request. |
